Spring has sprung

According to the calendar, today is the first day of Spring.

Today, it rained.
All day.

And it was cold.

We really need to wait for the Spring Equinox.
Mother Nature knows better than we do with our man made calendars.


My little man thought the rain was fabulous.

And we decided to bake these sneaky vegetable muffins, courtesy of Meagan.


Ingredients

2 cups spelt flour or wholewheat flour
1 tsp baking powder
1 tsp bi-carb
2/3 cup raw cane sugar
1 tsp cinnamon
1 medium carrot, grated
1 small zucchini, grated
1/2 cup sultanas
100 g melted organic butter
2 free range eggs, lightly beaten
1/2 cup whole organic milk

Directions

Preheat oven to 200º and line muffin tray with muffin cups.
Stir sugar, flour, bi-carb, baking powder and cinnamon together in a large bowl.
Add the grated veggies and sultanas until coated with flour.
Stir in the melted butter, beaten eggs and milk.
Spoon the mixture into the muffin tray.
Bake for 15-20 minutes (depending on the size of muffins you are baking).
Remove and cool in muffin tray fro 5 minutes.
Transfer to a wire rack to cool completely.


These have been very very popular.

Xavier kept coming back for more.
Annie said that they are the best muffins she has ever tasted.
Sohail couldn't believe that there are veggies inside.

The intention has not been for this to become a cooking blog.
But I am discovering so many yummy things in the kitchen at the moment.
And I just have to share them.

  1. It sounds like the muffins that you made were a hit for everyone in the family and the bonus was that they were nice and healthy for them. It's good finding and trying new recipes especially ones that everyone enjoys. I think I'll give these muffins a try. Thank you for the recipe. xo
